No Flour and No Butter Chocolate Chip Cookies

My mom taught me at a young age that baking is a science.. you have to be exact. Where with cooking you can do a little of this and a little of that. Experimenting with baking can get frustrating and expensive. But last night I got lucky and knocked it out of the park first time.

  1. 1 cup of Almond butter
  2. 3/4 cup of Splenda blend brown sugar
  3. 1 large egg
  4. 2/3 cup of chocolate chips
  5. 1 tsp of baking soda
  1. In a large bowl mix almond butter, sugar, baking soda, egg & brown sugar. Using a hand held or stand mixer mix ingredients together for 1-2 minutes. Fold in chocolate chips. Then scoop on a lined cookie sheet. Bake for 8-10 minutes. (do not over bake these, they will harden when they cool) Let cool for 2-4 minutes on cookie sheet then place on a cooling rack or covered counter top.
