Healthy Mexican Pizza

Okay so this healthy mexican pizza has been on my mind for months. mexican-pizza-greek-yogurt My soon to be in-laws love Taco Bell’s mexican pizza. I have been determined for some time now to make it healthier than the popular fast food chains recipe. mexican-cheesey-cut-in-four-pizza without compromising the flavor. mexican-pizza-pulled-apart I think this might become a regular thing in the Myrick home.. we both love mexican food and with no additives or surprises in your food? this is a no brainer. mexican-pizza-cut

Ingredients
  1. 1 lb of ground 99% lean turkey
  2. 5 tbsp of hot sauce of choice, I used the taco bell medium
  3. 2 tbsp of McCormick Mexican blend
  4. 1 cup of refried black beans
  5. 1/2 cup of salsa
  6. 1 1/4 cup of 2% mexican blend shredded cheese
  7. 10 small corn tortillas or if you want it crunchier try tostadas
  8. 1 tbsp of olive oil
Instructions
  1. In a large skillet cook turkey, add 3 tbsp of hot sauce and mexican blend while cooking. Set aside. On a lined baking sheet lightly paint on olive oil on each side of tortillas. Cook on 375 for 6 minutes on each side, or until lightly toasted. If using tostadas, skip this step. Now prepare you pizzas. Spread 2 tbsp of beans evenly on 5 of the tortillas, then 2 tbsp of the turkey. Top with a tortilla. Paint the top tortillas with the other 2 tbsp of hot sauce. Add 2 tbsp of turkey to each one, top with salsa and then 1/4 of cheese to each pizza. Broil in the oven until cheese is completely melted.
